Grilled Eggplant with Feta

Ingredients
2 large eggplants, sliced 1⁄2 inch thick
Bowl & Basket Specialty Olive Oil
2 tsp Bowl and Basket garlic and herb seasoning
1/4 cup crumbled Bowl & Basket Specialty Feta Cheese
Directions
- Spread sliced eggplant out in an even layer on 1 to 2 large baking sheets.
- Sprinkle liberally with salt on each side and let sit for 10-15 minutes.
- Wipe off accumulated water and the excess salt. Drizzle eggplant with olive oil and sprinkle with seasoning.
- When ready to cook, preheat grill to 425 and be sure that grill grates are clean and well oiled.
- Grill eggplant for about 3-5 minutes per side, or until golden brown and grill marks have formed.
- Remove from grill and top with crumbled feta and additional olive oil if desired.
