1 3/4 pounds skirt or flat iron steak
1 tablespoon vegetable oil
1 tablespoon carne asada seasoning
1 1/3 cups queso Oaxaca
1/2 cup prepared guacamole
1/4 cup finely chopped white onion
2 tablespoons finely chopped fresh cilantro
4 corn tortillas
1/4 cup drained pickled red onion
1/2 cup crumbled queso fresco
1/4 cup medium salsa
4 soft taco flour tortillas, warmed
1 medium avocado, peeled, pitted and chopped
1/4 cup finely chopped red onion
4 teaspoons hot sauce
4 lime wedges
Directions

Carne Asada

 1. Brush steak with oil and sprinkle with seasoning; let stand 30 minutes at room temperature or cover and refrigerate up to 24 hours.

2. Prepare outdoor grill for direct grilling over medium-high heat. Place steak on hot grill rack; cover and cook 9 minutes or until internal temperature reaches 145° for medium, turning occasionally. Transfer steak to cutting board; tent with foil and let stand 5 minutes. (Internal temperature will rise to 155° upon standing.)

3. Preheat griddle or large nonstick skillet over medium heat. In batches, with 1/3-cup measuring cup, drop cheese in 5-inch circles onto griddle; cook 3 minutes or until golden brown, turning once. Transfer cheese shells to work surface. Makes 4 cheese shells.

 Tacos

 4. Slice steak against the grain. Fill cheese shells with steak, guacamole, white onion and cilantro, corn tortillas with steak, pickled red onion, queso fresco and salsa, and flour tortillas with steak, avocado, red onion and hot sauce garnished with lime wedges. Makes 12 tacos.
