Ingredients
1 1/2 cups almond flour
1 tsp pumpkin pie spice
3/4 tsp baking powder
1/2 cup small curd cottage cheese (4% milkfat)
3 large eggs
1/2 cup 100% pumpkin puree
1/4 cup unsweetened almond milk
2 tbsp sugar-free maple syrup, plus extra for serving (optional)
Directions
  1. In small bowl, whisk flour, pumpkin pie spice and baking powder.
  2. In blender, purée cottage cheese on high until smooth. Add eggs, pumpkin, milk and syrup; purée on high until smooth. Add flour mixture; purée on low until just combined. Makes about 3 cups batter.
  3. Preheat waffle iron; liberally spray both sides of iron with cooking spray. Ladle enough batter to cover surface into iron (about 3/4 cup batter, depending on size of waffle iron); close iron and cook 4 minutes or until golden brown. Repeat with remaining batter to make 3 more waffles. Makes 4 (6 1/2-inch) waffles.
  4. Serve waffles drizzled with syrup, if desired.
