Pumpkin Cottage Cheese Waffles

Ingredients
1 1/2 cups almond flour
1 tsp pumpkin pie spice
3/4 tsp baking powder
1/2 cup small curd cottage cheese (4% milkfat)
3 large eggs
1/2 cup 100% pumpkin puree
1/4 cup unsweetened almond milk
2 tbsp sugar-free maple syrup, plus extra for serving (optional)
Directions
- In small bowl, whisk flour, pumpkin pie spice and baking powder.
- In blender, purée cottage cheese on high until smooth. Add eggs, pumpkin, milk and syrup; purée on high until smooth. Add flour mixture; purée on low until just combined. Makes about 3 cups batter.
- Preheat waffle iron; liberally spray both sides of iron with cooking spray. Ladle enough batter to cover surface into iron (about 3/4 cup batter, depending on size of waffle iron); close iron and cook 4 minutes or until golden brown. Repeat with remaining batter to make 3 more waffles. Makes 4 (6 1/2-inch) waffles.
- Serve waffles drizzled with syrup, if desired.
