You will need: Eggs or egg replacer Oil or melted butter Water or fruit juice See vegan muffin directions below Muffin Directions: 1. Heat oven to 400°F. Lightly grease muffin pan (or insert paper liners). 2. Combine 2 eggs, 1/4 cup oil or melted butter and 1 cup water. Add mix and blend well. 3. Bake 12-15 minutes or until tops turn golden brown. Makes about 12 muffins. Scone Directions: 1. Heat oven to 400°F. Lightly grease cookie sheet. 2. Cut 8 tablespoons cold butter into dry mix using pastry blender or forks until somewhat crumbly. Add 2 beaten eggs and 1/3 cup milk and stir until just combined. 3. Shape into 8 disks, wetting fingers if needed. Sprinkle with sugar if desired. 4. Bake 12-15 minutes or until golden brown. For Either: Try adding: dried cherries, dried or fresh cranberries, blueberries, chocolate chips, nuts, poppyseeds, lemon or orange zest. Vegan Muffins: Make as directed above, except replace eggs with Namaste Foods Egg Replacer. Mix up replacement 'eggs' as directed on package. Other additions stay the same. Other egg replacements may work, but may require experimentation. Actual oven temperature may vary. Adjust baking time as necessary.
