Ingredients
1 package (14.5 ounces) Barilla Protein+ Spaghetti
1 1/2 tablespoons olive oil
1 large yellow onion, halved and thinly sliced
4 garlic cloves, minced
1 tablespoon chili crisp
1 tablespoon less sodium soy sauce
1 1/4 cups canned unsweetened lite coconut milk
1 1/2 tablespoons chopped fresh cilantro
Directions
  1. Prepare spaghetti as label directs; reserve 1/4 cup cooking water. Drain spaghetti; return to saucepot and cover to keep warm.
  2. In large high-sided skillet, heat oil over low heat. Add yellow onion, 1/4 teaspoon each salt and pepper, and 1/4 cup water; cover and cook 10 minutes. Uncover; cook and stir 15 minutes or until golden brown and very tender. Increase heat to medium. Add garlic; cook and stir 1 minute or until fragrant. Add chili crisp and soy sauce; cook and stir 1 minute. Add coconut milk, cilantro and reserved cooking water; heat to a simmer. Cook and stir 3 minutes or until slightly thickened. Add spaghetti; toss. Makes about 8 cups pasta.
  3. Serve pasta garnished with peanuts, cheese and/or green onions, if desired.

Tip: Add chopped rotisserie chicken meat or shrimp during the last 3 minutes of cooking for additional protein.
