


Camping Banh Mi
To make the Quick Pickles:
Combine the carrot and daikon matchsticks in a medium bowl. Add the sugar and salt, and massage into the vegetables until fully absorbed.
Transfer into a clean jar, and pour the water and vinegar over top.
Screw on the lid, and refrigerate at least two hours, or overnight.
To make the Banh Mi:
Prepare the Smithfield Applewood Smoked Bacon Fresh Pork Loin according to the package instructions. Make sure it reaches an internal temperature of 145ºF. Let rest 5 minutes before thinly slicing.
Spread each of the baguette halves with Wholesome Pantry Organic Real Mayonnaise. Top with slices of pork, the jalapeno and cucumber, the Quick Pickles, and a handful of Wholesome Pantry Organic Cilantro.
