Ingredients
1 cup all-purpose flour
1 cup medium grind cornmeal
1 teaspoon baking powder
2 teaspoons sugar
1 teaspoon salt
1 large egg
½ cup buttermilk
1 Tablespoon melted unsalted butter
1 can (11 ounces) Green Giant SteamCrisp White Shoepeg Whole Kernel Corn, drained
2 cups vegetable oil for frying
Directions
  1. Whisk together flour, cornmeal, baking powder, sugar and salt in a medium mixing bowl. Add egg, buttermilk and melted butter. Whisk to combine. Fold in corn.
  2. Heat oil over medium to 365ºF in a deep skillet or pot. Use a 2-tablespoon cookie scoop to drop rounds of batter – 6 pieces at a time – into oil. Fry for 5-6 minutes, turning hush puppies every 2 minutes for even cooking.
  3. Remove fritters from oil with a slotted spoon and place on a plate lined with paper towels. Repeat with remaining batter. Serve warm.

Tips:

Hush puppies with corn are often paired with barbeque, fried chicken or seafood, especially shrimp and grits. Another popular tradition in Southern cuisine is slicing hush puppies in half and buttering both sides.
