We extrude our pasta through bronze dies which leaves a rough surface in order to soak up your sauce. Most American produced pasta is made with highly processed flour / wheat and therefore loaded with artificial nutrients (just look at the ingredients list) and extruded through teflon dies which is not only a known toxin, but leaves a smooth surface which prevents your pasta from soaking up your sauce. New York's finest over 100 years The Monte family emigrated to Brooklyn from Avellino, Italy in 1906 and began serving traditional Neapolitan fare to the community at the famed Monte's Venetian Room where our world renowned sauce was made daily by (Great Grandma) Filomena in a large pot bellied stove. The restaurant drew a who's who of New York City. Celebrities brushed shoulders with longshoremen, judges, business tycoons, loan sharks, book makers and bankers. Monte's entertained all walks of life. In 1956, the Monte family expanded eastward to purchase and manage the iconic Gurney's Inn in Montauk, NY. The recipes and dishes that made the Brooklyn hangout famous were brought to the sea, and the small oceanfront hotel property was enhanced and expanded over the years to become the internationally acclaimed destination resort that it is today. The family continues their legacy of hospitality today at Monte's in the historic Montauk Manor. The traditions continue now 3+ generations. Over 100 years of serving the best of everything to the best people, in the best possible manner.
