Ingredients
3 slices thin-sliced organic white bread, cut into 1-inch pieces
2 tbs granulated sugar, divided
1 tbs unsalted butter, melted
1/4 tsp ground cinnamon
1 medium peach or cantaloupe, pitted and chopped
1 cup hulled and quartered strawberries
1/2 cup blueberries
2 tsp chopped fresh mint
Directions

1. Preheat oven to 350°. In medium bowl, gently stir bread, 1 tablespoon sugar, butter and cinnamon until just combined; spread on rimmed baking pan. Bake 10 minutes or until bread is lightly browned and toasted; cool.

 

2. In medium bowl, stir peach, strawberries, blueberries, mint and remaining 1 tablespoon sugar; let stand 15 minutes. Fold in bread; serve immediately. Makes about 5 cups.
