Ingredients
3 pounds boneless Boston pork butt, cut into 3-inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil
2 cups Coca-Cola
1/2 cup aged rum
1/4 cup fresh lime juice
1 tablespoon lime zest
16 (5-inch) flour street taco tortillas, warmed
1 cup chopped white onion
Chopped fresh cilantro
hot sauce
Lime wedges
salsa
Directions
  1. In large bowl, toss pork, salt and pepper. In 2 batches, in large skillet, heat 1 tablespoon oil over medium-high heat. Add pork; cook 4 minutes or until browned, turning once.
  2. Transfer pork to 5- to 6-quart slow cooker; stir in Coca-Cola, rum, lime juice and lime zest; cover and cook on high 4 hours or low 8 hours or until pork is very tender. Transfer pork to large bowl; with 2 forks, shred. Skim excess fat from sauce in slow cooker; reserve 1 cup and discard remaining sauce. Add reserved 1 cup sauce to bowl with pork; toss. Makes about 4 cups pork mixture.
  3. Serve pork mixture in tortillas topped with onion, and cilantro, hot sauce and/or salsa, if desired, garnished with lime wedges, if desired. Makes 16 street tacos.
