Ingredients
2 pounds 85% lean ground beef
1 large egg
2 cups finely crushed white corn tortilla chips, plus additional for garnish
1 cup mild, medium or hot taco sauce, divided
1/2 cup finely chopped white onion
1 tablespoon 40% less sodium taco seasoning
Chopped fresh cilantro for garnish (optional)
Directions

1. Preheat oven to 350°; spray 9 x 5-inch loaf pan with cooking spray. In large bowl, gently mix beef, egg, chips, 1/2 cup sauce, onion and seasoning; spread in prepared pan and bake 35 minutes.

 

2. Increase oven temperature to 450°; spread top of meatloaf with remaining 1/2 cup sauce. Bake meatloaf 15 minutes or until internal temperature reaches 155°; tent meatloaf with foil and let stand 10 minutes. (Internal temperature will rise to 160° upon standing.) Cut meatloaf into 8 slices

 

3. Serve meatloaf garnished with cilantro and/or crushed chips, if desired.
