Ingredients
1 package (7.9 ounces) Halloumi Cheese, cut into 1-inch cubes ( can substitute with feta )
3 cups Cubed Fresh Watermelon
1 cup Fresh Mint Leaves
1 cup Halved Green Grapes
1/4 cup Chopped Unsalted Pistachios
2 tablespoons Lemon Juice + 1 teaspoon Lemon Zest
2 tablespoons Olive Oil
4 (10-inch) Wooden Skewers
Directions

1. Prepare outdoor grill for direct grilling over medium-high heat; soak skewers in water 20 minutes. Thread cheese onto skewers; spray with olive oil cooking spray. Place skewers on hot grill rack; cover and cook 5 minutes or until grill marks appear, turning once. Transfer skewers to cutting board; cool slightly. Remove cheese from skewers

 

2. In large bowl, toss watermelon, mint, grapes, pistachios, lemon juice, oil, lemon zest and cheese; sprinkle with 1/2 teaspoon each salt and fresh ground black pepper. Makes about 5 cups.
