Spicy Sausage and Garbanzo Bean Soup

Summer is starting to drift away and fall will be here before we know it. This warm and comforting soup is perfect for cool late summer evening┬áNot only is this soup packed full of flavor it’s also made in the slow cooker. Hello easy!

I used ShopRite organic beef stock for this recipe and I loved the richness it brought to the soup. Plus I love that it’s organic. It can be hard finding a good quality organic stock that does not cost too much.

Spicy Sausage and Garbanzo Bean Soup

Yield 6 servings


1 pound spicy Italian sausage, removed from casing

1/2 pound dried garbanzo beans

1 medium yellow onion, chopped

4 ribs of celery, chopped

3 carrots, peeled and small diced

2 cloves garlic, minced

6 cups ShopRite Organic Beef Stock

4 sprigs fresh thyme

1 (15 ounce) can diced tomatoes

1 bunch kale, chopped

Grated Parmesan cheese


In a large skillet add sausage and cook until sausage is browned.

Add sausage to a large 6 quart slow cooker and add in garbanzo beans, onion, celery, carrots, garlic beef stock and thyme.

Cook on low for 6 hours and then add in tomatoes and chopped kale. Let the mixture cook for another 30 minutes until the kale is soft.

Serve with a sprinkle of Parmesan cheese if desired.
