Southwestern Chicken Kebabs

Summer may be ending, but grilling season isn’t over yet … at least not at my home!  We grill year-round on our small charcoal grill.  We love cooking outdoors on charcoal because it’s fast, it imparts a smoky flavor on our food, and it keeps the mess out of our small kitchen.  We tend to do elaborate grilled or smoked meals on weekends, but we also enjoy using our grill on weeknights after work.  When I received a bottle of ShopRite’s Southwestern Marinade earlier this summer I knew it would be perfect for our last-minute weeknight dinners.

These marinades work in as few as 30 minutes.  If you are like me and you forgot to deal with dinner before you left for work in the morning, you can let your meat (or vegetables) marinade while you heat up the grill.  I opted to use boneless, skinless chicken breast.  I cut it into chunks and dumped it in a zip-top bag with the marinade.  The Southwestern Marinade is flavorful and zesty, but not spicy – a crowd pleaser.  My husband loves extra heat, so I added a few shakes of hot sauce to the bag and I also put hot sauce on the table when I served the chicken.

Once the marinade had worked (at least 30 minutes, but you can also leave it on the chicken all day) I put the chicken chunks on metal skewers and cooked them over our grill.  So easy, you don’t even need a recipe.  One bottle of marinade was enough for eight chicken breasts.  You can use the leftovers in wraps, salads, tacos, enchiladas … wherever you need grilled chicken during the week.
