One Pot Meal: Pan Fried Gnocchi with Sausage and Sautéed Kale

Can you feel it? Spring is in the air! With daylight savings upon us, the days will get longer allowing us more time to pack extra activities into our already busy lives.

Demanding work schedules and after-school clubs and sports sometimes leave us feeling overextended and overwhelmed. Most often, when rushing around from activity to activity the first thing that tends to get pushed to the side is meal time. Sure, it can be tempting to grab something through the brightly lit and ever-so-tempting drive thru, or collapse on the couch and just order a pizza, but being busy doesn’t mean you can’t find time to cook a delicious meal at home. One of the best ways to cook dinner quickly is have a few one pot meal recipes to add to your weekly meal rotation.

A favorite in my kitchen is Pan Fried Gnocchi with Sausage and Sautéed Kale. In this one-skillet supper, I pan-fry pillowy potato gnocchi until golden brown before adding crumbled sausage and fresh kale. Together, the flavors combine to create a dish that is not only flavorful but also full of homemade comfort.

Pan Fried Gnocchi with Sausage and Sautéed Kale


  • Ground sausage – 1 lb.
  • Kale – 1 bunch, leaves / stems separated
  • Gnocchi – 1 lb.
  • Garlic – 2 cloves, chopped
  • Salt – 1 teaspoon, or to taste
  • Olive oil – 2 tablespoons


Heat large skillet or pan over medium heat. Add 2 tablespoons of olive oil and gnocchi. Pan fry until gnocchi is golden brown. Remove from pan onto plate and set aside. Add ground sausage to pan, breaking up into small pieces and brown 5-7 minutes. Drain any excess fat. Add chopped garlic and sauté for 2 minutes. Add in kale leaves, as much as can fit into the pan. With each addition, add a pinch of salt. Sauté until all the kale leaves are slightly wilted. Add gnocchi back into the pan, toss everything through and reheat until gnocchi are warm. Serve.
