Nuts for Crunchy Chicken

Busy families need quick, easy and flavorful meals during the week. In the past few years I’ve managed to come up with a few favorites that I can pull together within 30-40 minutes. One of my go-to main dishes is homemade chicken strips. Yes, you could purchase the premade chicken strips, but if you invest just a few extra minutes you can make them from scratch!

I have made them in so many different ways based on the ingredients I have on hand. When I received this month’s package of ingredients to use and it was filled with ShopRite nuts and trail mixes I was thrilled to have some new inspiration! My youngest loves cashews, so I popped the can open and used my food processor to crush them. Mixed with some bread crumbs and I had a gorgeous coating for our dinner that night!

The cashews add just a touch of sweet crunchiness to the chicken and switch up the flavor so that it’s not the “same old, same old” meal. The chicken was gone faster than you can imagine.

So, next time you are at ShopRite, head down the aisle with the different types of nuts that you might usually just eat for a snack!

Crunchy Cashew Chicken

2 chicken breasts, sliced into strips or thin slices
1/2 cup bread crumbs
3/4 cup cashew nuts – crushed or ground up in a food processor
2 eggs
salt and pepper

Preheat oven to 400 degrees.

Combine bread crumbs and crushed nuts in a shallow dish. Whisk eggs in a separate shallow dish. Dip chicken first in egg, then in the nut mixture. Place on a foil covered baking sheet.

Bake for approximately 20-25 minutes or until chicken is done. Serve immediately.
