Dinner for Dad

I had big plans for Father’s Day. I was going to pull out our new grill, make my husband a juicy organic steak and serve it with grilled vegetables and roasted potatoes. Then reality set in. Our 10 month-old son kept us on our toes all weekend, the weather was too inconsistent to grill outdoors and we seemed to be running out of time for a special dinner.

I did, however, want to cook my husband a special treat. I opted for the Clayton’s Organic Boneless Ribeye that I picked up on our weekend ShopRite trip. I seasoned it lightly with salt and pepper, seared it for a few minutes on each side for a medium-rare finish and whipped up a quick pan sauce from fresh herbs in our garden. It was a hit! Tender, juicy and restaurant-quality, but it only took me about ten minutes to cook it up in our kitchen.

My family is pleased with the quality of Clayton’s Organic beef. Between working full-time and raising our infant son, we don’t have a lot of opportunities to enjoy gourmet restaurant meals. This steak yielded a restaurant-quality result, so now I know I can keep one or two in the fridge for those quiet moments when we get to enjoy a nice dinner at home. Clayton’s Organic Ribeye with Rosemary Pan Sauce

1 boneless Clayton’s Organic ribeye steak

salt and pepper, to taste

1 sprig of fresh rosemary

2 tablespoons butter, divided

3/4 cup low-sodium beef stock

Allow steak to come to room temperature for about 30 minutes prior to cooking. Season steak with salt and pepper to taste. (Keep in mind that the finishing sauce has some additional saltiness.)

Heat a pan (preferably cast iron or stainless steel) to medium high heat. Melt one tablespoon of butter in the pan. Sear steak and cook for about 3 minutes on each side (for medium), or to your desired level of doneness. Remove steak and set aside.

Reduce heat to medium and deglaze pan with beef stock. Add additional black pepper, to taste, and 1 tablespoon of butter. Put the whole sprig of rosemary in the pan and let the liquid reduce for 3-5 minutes.

Serve steak with sauce drizzled on top and extra sauce on the side.
