Hot Chocolate Pudding

The other day, my husband had a chocolate craving and we didn’t have any in the house. (For Shame!)

He was all set to go out in a pouring rain storm at ten at night to go to the store, when I remembered we had ShopRite hot chocolate packets in the pantry.

Hot chocolate goes hand in hand with cold weather, but it also makes a pretty great ingredient for baking and last minute “I Need Chocolate Now” cravings.

I made this easy stove top pudding.  It takes about 15 minutes to make, not counting the time to chill, but I put the servings for the kids in the refrigerator and the hubby and I ate ours warm. I topped mine with chocolate-berry granola, and he opted for whipped cream.  Craving managed.



5-6 packets ShopRite hot chocolate mix with marshmallows
4 Tbsp flour
2 cups milk (I used 1% milk.  Your pudding will be thicker and richer if you use whole milk. Do not use skim milk.)
2 Tbsp butter
1 tsp. vanilla


Mix the hot chocolate mix and flour in a saucepan and whisk in the milk.  Cook over medium heat, stirring frequently, for 10-12 minutes, scraping sides and bottom of pan with a spatula.  When mixture starts to thicken, stir for an additional 2 minutes, then remove from the heat.  Stir in the butter and vanilla and pour into ramekins.  Chill in the refrigerator or enjoy warm.
