I love pie, but I’m not a master at making a pie crust. While traditional homemade pie crusts are delicious, they can also be time-consuming. At my home I save time-consuming desserts for special occasions. This cobbler gives you the same flavors you like in a traditional pie: buttery crust and a sweet, juicy fruit filling. Cobbler is a southern dessert that reminds me of a cross between a cake and a pie. However, a cobbler is much easier to make and is the perfect hot dessert for a cold winter evening. I was taught to make cobbler with self-rising flour, but I notice that most people in this area don’t keep self-rising flour in the pantry, so I adapted the recipe to include baking powder.
In the summer I use fresh fruits, but frozen and canned fruits are great choices for any time of year. For this cobbler I used ShopRite Pitted Dark Sweet Cherries in Heavy Syrup. I love cherries, but I hate spending time pitting them when they are in season. With this product I just open a can and keep moving with my recipe. For this recipe I chose the drain the cherries. If you’d like, you can save the reserved cherry juice for another use.
You can take ten minutes to make this cobbler right before dinner, or you can mix it up and store the unbaked cobbler in the fridge and bake it within 24 hours. I like to pop it in the oven while we’re eating dinner and have a hot dessert ready once we finish our meal.
2 cans ShopRite Pitted Dark Sweet Cherries in Heavy Syrup, drained
1/2 cup (one stick) butter, melted
3/4 cup sugar
3/4 cup flour
1 teaspoon baking powder
Preheat oven to 350 degrees. Pour melted butter into a 1.5 or 2 quart baking dish.
In a bowl, whisk together sugar, flour and baking powder. Whisk in milk until blended.
Pour batter into baking dish over butter. Pour cherries evenly over batter.
Bake cobbler for about 45 minutes, or until golden brown. Serve hot.
