Chicken Tortellini with Feta Cream Sauce

I was given a challenge. Create a delicious Valentine’s Day meal for less than $25.  I knew I could do this, but I also knew that I wanted something easy and quick.  Since Valentine’s Day falls on a Monday this year it was important for me to come up with a quick, yet delicious, after work Valentine’s Day dinner.

As I wandered around ShopRite I spied something I had never seen before.  ShopRite Kitchen brand fresh chicken tortellini pasta! I had to give this a try.  So I looked around and settled on pairing this delicious pasta with feta, mushrooms and spinach. It would be delicious … and it was! Super simple too – only 30 minutes to prepare!  Your Valentine will love this meal … Enjoy!!!

Chicken Tortellini with Feta Cream Sauce

1 9oz package ShopRite Kitchen chicken tortellini
1 teaspoon olive oil
1 package sliced mushrooms
3/4 cup half and half
3/4 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon oregano
Few cracks of fresh pepper
2 handfuls of fresh spinach

Prepare a pot of water and put on the stove to boil.

Once boiling add fresh chicken tortellini. Cook for 5-8 minutes and drain.

Add olive oil to pan and cook on medium heat. Add mushrooms and saute until soft. Once soft take out of pan and set aside.

Add half and half, feta cheese, Parmesan cheese, oregano and pepper to the medium heat pan. Heat until cheese is melted and sauce is thick. Approximately 7 – 10 minutes. You want to whisk the sauce so it does not burn or scorch.

Once sauce is thick take off the heat and add cooked tortellini, mushrooms and handfuls of fresh spinach.  Toss together to combine. The heat of the sauce and pasta will help wilt the spinach.

Serve and enjoy!
