But I Wanted A Cupcake Bars

I have confidence that I am not alone in this great big world when I say that I have occasional late-night snack attacks. I recently had one in which all I wanted was a cupcake.  I opened my refrigerator door, cupboards, pantry, and much to my chagrin no cupcake appeared.  I even looked under the kitchen sink, just in case.

I searched my house high and low, and looked through my window into my neighbor’s kitchen to see if perhaps she had foolishly placed a tray of freshly baked cupcakes in the window to cool.

It was at this woebegone moment that I resigned myself to the inevitable: I would have to bake something. This reality meant I had to go back to scouring the refrigerator, cupboards and pantry to see what I had in stock.

I foraged, searched, probed and gathered what I had into one pile: ShopRite Whole Wheat Flour, ShopRite Dark Brown Sugar, ShopRite Almond Milk, white chocolate chips.

Something was going to have to come of this. The State of the Union was obviously at stake. I had to bake something. Fast. And it had to taste good. As good as a cupcake.

I went into a trance. A pinch of this. A dash of that. A heap of this and that. I threw my creation into the oven, waited an agonizing 30 minutes + 5 for the creation to bake and cool down.

It was like purgatory.

After a long 35 minutes, I devoured a serving of this whole wheaty, dark brown sugary goodness. My desire for cupcakes had vanished. It was a miracle.

….Nay! The real miracle occurred when I photographed my work of art: the stacking of the bars.  (I hope you have realized that the picture-taking was clearly done the next morning, as the sun is out. It was not the kind of miracle in which the sun suddenly appeared as I took a bite into the bar, regardless of how story-enhancing that situation might have been, parenthetically speaking.)

It took skill and precision to construct what you see before you.  A true feat has been documented. It fell 5 times mid-picture, except for one monumental moment.

As you can see, I woke up this morning and put on my modest pants.

But I Wanted a Cupcake Bars
Yields: 12 servings
Baking Time: 30 minutes

2 cups ShopRite Whole Wheat Flour
½ cup ShopRite Dark Brown Sugar
1 tsp baking powder
½ tsp baking soda
Pinch of salt
¼ cup unsalted butter, melted
1/3 cup maple syrup
¾ cup ShopRite Almond Milk
¾ cup white chocolate chips

1. Preheat your oven to 350 degrees.
2. Grease a 9×9 baking dish. Set aside.
3. Whisk together the flour, sugar, baking powder, baking soda, salt, and white chocolate in a medium sized bowl. In a second bowl, combine the butter, syrup,
and almond milk. Add to the dry ingredients, stirring until well-combined.
4. Pour into prepared baking dish.
5. Bake for approximately 25-30 minutes or until a toothpick comes out clean. Let cool for 5 minutes before cutting and serving.
