Black Bean, Salsa and Turkey Soup

It’s getting cooler around these parts and there have been several downright chilly days that just begged for a pot of soup. This one goes together really quickly, is full of flavor and healthy to boot.

ShopRite’s Special Edition Salsa is the star of the show here and I’ve found that other salsa’s just don’t live up to the flavor of the Three Pepper salsa in this recipe.

Use leftover turkey from Thanksgiving or change up the turkey for chicken or even lean ground beef and the it will be every bit as delicious. In this house we never have leftovers. Serve with cornbread or tortilla chips as a light lunch, or add quesadillas filled with salsa, turkey and cheese for a more complete meal.

Black Bean, Salsa and Turkey Soup
Serves 4 – 6

6 cups turkey or chicken stock
1 jar ShopRite Special Edition Three Pepper Salsa
1 can (15 ounces) ShopRite Black Beans – drained
1 clove garlic – minced
1 teaspoon ground cumin
1 teaspoon chili powder
2 cups diced turkey breast

Combine all in a medium soup pot and simmer for 20 minutes.
Top with light sour cream and shredded cheddar if desired.
Easy as that!
