How Sweet It Is!

You may have seen this one before on in our Recipe Center.  So, we figured we’d give it a shot, because we were told repeatedly just how delicious this recipe was! And after we had the chance to try it, this is for sure a Thanksgiving WIN!

Classic Sweet Potato Casserole

Preparation Time:20 minutes

Cook Time:1 hour

This recipe can be assembled a day ahead and refrigerated, then baked the next day.

6 medium sweet potatoes or yams (about 3 lbs.)
3/4 cup granulated sugar
1/2 14-oz. can sweetened condensed milk
3 Tbs butter, melted
1 egg
1 tsp orange peel
3 Tbs orange juice
1/2 tsp ground nutmeg, divided
1 cup firmly packed light brown sugar
1/2 cup chopped pecans
1/2 cup chopped walnuts
1/3 cup flour
1/3 cup butter, melted

In a Dutch oven place potatoes in enough boiling water to cover; cook 30 to 40 minutes or until tender; drain. Cool slightly; peel.

Preheat oven to 425°F. Coat a 2-quart baking dish with nonstick cooking spray. In a large bowl combine potatoes, granulated sugar, milk, 3 tablespoons butter, egg, orange peel, juice, 1/4 teaspoon of the nutmeg, and salt to taste; mash with a potato masher or beat with an electric mixer at medium speed until blended. Spoon mashed potato mixture into baking dish.

In another bowl stir together brown sugar, pecans, walnuts, flour, 1/3 cup butter and remaining 1/4 teaspoon nutmeg. Sprinkle evenly on potato mixture.

Bake, uncovered, 20 minutes; cover with foil and bake 10 minutes more or until heated through.
