Eggsquisite Eggs

This time of year eggs become very popular! They are used for coloring, decorating, finding, and of course they are presented bountifully in beautiful dishes at tables across the world. Eggs truly are quite incredible if you think about it.

Eggs are gluten free, packed with protein (about 6 grams of protein per egg), have choline (which supports the transportation of nutrients throughout the human body), contain all 9 essential amino acids, and are FREE of carbohydrates and sugar! Talk about awesome! Eggs are also a budget friendly, high quality protein and meal source. One egg averages only 15 cents per egg for commercial eggs or only 40 cents per egg for organic free range eggs.

Eggs are used every day to create delicious meals, from the simple comfort foods like poached, fried, or hard boiled eggs to eggsquisite dishes such as tarts, quiches, custards and soufflés. Eggs are everywhere!!

A few years ago, one of our friends gave us a dozen eggs from their chickens. They were beautiful, it was like receiving a carton of eggs that were a piece of art. All of the eggs were different shades of beige and rich browns. The shells were much stronger than traditional eggs, and to our surprise, once cracked open into the pan, the eggs stood high and the yolks were the most brilliant colors of orange.

This led us on our own journey of raising heirloom baby chicks and now we are happy to say, we have our own beautiful heirloom chickens. I often refer to them affectionately, as “Our Girls.” One of our favorite benefits that we enjoy is the bounty of eggs we have on hand to create new delicious recipes with. Amy-EggsMy husband, Pierre, and I were hungry one afternoon and needed a quick pick me up. We immediately considered one of the staples in our kitchen, eggs. Hard boiled eggs are a quick and an easy snack to make, however sometimes, they can be a bit on the boring side of culinary creations. With a touch of inspiration we turned hard boiled eggs into a healthy dish that you can be proud to serve to your family and friends (this is a fabulous quick dish to whip up for an appetizer).

This particular afternoon, we had fresh basil (frozen and waiting to be used, in our freezer), raw organic apple cider vinegar (one of our all-time favorite ingredients in our kitchen), organic extra virgin olive oil, and Himalayan sea salt at the ready. These simple ingredients turned into a fresh delicious dish that everyone loved and that has been served many times since. 8 hard boiled eggs, shells removed

2 tablespoons of organic raw apple cider vinegar

2 tablespoons of organic extra virgin olive oil

2 tablespoon of fresh basil, minced (1/2 teaspoon of dried basil)

¼ teaspoon Himalayan sea salt


Cut hard boiled eggs in half lengthwise and place cut side up on a serving platter (carefully clean the knife with a damp paper towel in between cutting each egg to keep the yolk from the previous egg from getting yellow on the white of your next egg).

Drizzle the eggs with the organic, raw apple cider vinegar and the organic extra virgin olive oil.

Sprinkle the eggs liberally with the fresh basil. If you don’t have any fresh basil on hand, sprinkle with ½ teaspoon of dried basil.

Evenly sprinkle the dish with the Himalayan sea salt and these beautiful eggs are ready to enjoy.

*Quick Tip: Freeze fresh individual basil leaves in freezer bags, be sure to remove as much of the air as possible from the bags before you freeze the basil. If a recipe calls for fresh minced or finely chopped basil, quickly crunch the frozen basil leaves up immediately after you take them out of the freezer, and use in your favorite recipe*
