Easiest Chocolate Cake for Valentine’s Day

Happy (almost) Valentine’s Day! My husband and I typically don’t make a big deal out of the holiday since our wedding anniversary is just a few weeks away in early March. However, I love to bake for my family and my husband and son both love chocolate. When ShopRite challenged me to come up with a Valentine’s Day recipe I knew I wanted to create a treat that would be enjoyed by my entire family. Since chocolate is everywhere on Valentine’s Day I decided to bake a chocolate cake.

I call this cake “Cheater’s Chocolate Cake” because when I served it to my family they all thought it was a scratch cake. In reality, it’s a very simple cake made from a boxed mix, but no one has to know your secret.



1 box ShopRite Chocolate Cake Mix

1 (3.75 ounce) box instant chocolate pudding

2 cups sour cream

4 eggs

¾ cup vegetable oil

1/3 cup coffee liquor

1 cup ShopRite Semi-Sweet Chocolate Chips


Preheat oven to 350 degrees. Grease and flour a Bundt pan.

Mix the first six ingredients (everything except chocolate chips) with an electric mixer on medium speed until well blended (about three minutes).

Stir in chocolate chips.

Spread batter evenly into Bundt pan. Bake for 45-60 minutes or until a toothpick inserted in the center of the cake comes out clean.

Cool in pan for 10 minutes and then invert onto cooling rack. Dust with powdered sugar before serving.
