Honey Mustard Salmon

Honey Mustard Salmon

Ingredients

  • 1/2 cup butter (1 stick), softened
  • 1 Tbsp honey
  • 1 Tbs minced roasted garlic
  • 1 lemon, zested and juiced, divided
  • 3 Tbsp whole grain mustard
  • 4 (6-oz.) salmon fillets

Directions

  1. Preheat broiler to high. Coat a rimmed baking sheet with nonstick cooking spray. In a small bowl combine butter, honey, garlic, lemon juice and zest and mustard; mix well.
  2. Place fillets on baking sheet. Coat evenly with honey mustard mixture; season with salt and pepper to taste. Broil 8 to 10 minutes or until top is browned and fish flakes easily with a fork. Transfer to individual plates and serve with desired vegetables

Chili Lime Cod

Chili Lime Cod Filets

Ingredients

  • 1 tbsp dried Italian Seasoning
  • 2 tsp Paprika
  • 1 tsp Chili Powder
  • 1 Teaspoon Garlic Powder
  • ½ tsp Cumin
  • Salt and pepper, to taste
  • ¼ cup ShopRite Olive Oil
  • 24 oz cod filets
  • Zest and Juice of 3 Limes
  • Black beans and rice, for serving (optional)

Directions

  1. Combine all of the spices in a small bowl to make the rub. Lightly brush the cod filets with some olive oil and then coat on all sides with the spice mixture. Cover and refrigerate the cod filets for 30 minutes
  2. Preheat the oven to 425º and transfer the cod filets to a foil-lined baking sheet. Roast at 425 for 12-15 minutes, or until the fish flakes easily with a fork. Remove from oven and top with a drizzle of lime juice and the fresh lime zest.

Garlic Lemon Tilapia

Lemon Garlic Tilapia

Ingredients

  • 1/3 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 Tbs red wine vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1 Tbs chopped fresh rosemary
  • 1 tsp grated lemon peel
  • 4 (6-oz.) tilapia fillets
  • 2 Tbs lemon juice
  • 2 Tbs olive oil
  • Fresh rosemary sprigs (optional)
  • Roasted vegetables, such as asparagus and tomatos, for serving (optional)

Directions

  1. Preheat broiler. For vinaigrette, in a small bowl whisk together 1/3 cup oil, 1/3 cup lemon juice, vinegar, mustard, garlic, chopped rosemary, and lemon peel.
  2. Coat a baking sheet with nonstick cooking spray. Arrange fillets on baking sheet. Season with salt and pepper to taste, and drizzle with 2 tablespoons lemon juice and 2 tablespoons oil. Broil 4 to 6 minutes or until fish flakes easily with a fork. Top with rosemary sprigs (if desired) and serve with vinaigrette

Tomato Poached Flounder

Flounder Poached in Tomato Sauce

Ingredients

  • 4 (6-oz.) flounder fillets
  • 1/4 tsp crushed red pepper flakes
  • 1 can Wholesome Pantry crushed tomatoes
  • 2 Tbsp fresh lemon juice
  • 4 tsp olive oil
  • 3 garlic cloves, minced
  • 2 Tbs chopped fresh oregano
  • Roasted Asparagus and Potatoes, for serving (optional)

Directions

  1. Preheat oven to 400°F. Coat a 9×13-inch baking dish with nonstick cooking spray. Place fillets in baking dish. Sprinkle with red pepper flakes, and black pepper to taste.
  2. Add tomatoes to baking dish, spooning over and around fillets. Drizzle with lemon juice and oil; sprinkle with garlic, oregano, and pepper to taste.
  3. Bake 15 minutes or until tomatoes soften and fish flakes easily with a fork. Serve warm with roasted asparagus and potatoes
