How to Host the Perfect Spring Picnic Party

The sun is out, the temperatures are finally warming up and we can’t wait to spend the weekend outside! Whether it’s for a girls’ brunch, a romantic afternoon, or anything in-between, host the perfect picnic with a little help from your local ShopRite!

Step 1: Cheese Boards are a Major Crowd Pleaser

Who can resist all those perfectly sliced cheeses, crackers, olives and more? If you’re not sure where to start with your picnic lunch, pick 3-4 cheeses and pair with some fresh and dried fruits, crackers, olives, a few smoked meats and a crusty baguette!

Step 2: Finger Sandwiches are a Must

Thinking about a kid-friendly version of our picnic party? No problem! Everyone will adore bite-size finger sandwiches. Stick a few classics like PB&J (or Almond Butter and Jam if you’re a PB-Free household) and then add a few fun ones like the essential cucumber or smoked salmon and cream cheese!

Step 3: Up Your Salad Game with Greens, Grains and More!

Nobody wants a boring salad, so pull out all the stops for your picnic additions.

Simple grain salads keep well and are enjoyable cold or at room temperature. Think Wholesome Pantry farro, quinoa or brown rice and get creative with the additions! For a more classic green salad, something like a vibrant Greek salad with fresh grape tomatoes, salty olives and feta cheese will do the trick. Finally, who could resist the classic macaroni or potato salad? These are especially helpful if you plan on bringing little ones to the party. Store your salads in mason jars or re-usable plastic containers.

Really want to WOW your friends? Surprise them with these easy, breezy DIY refrigerator pickled vegetables! They’re perfect as antipasti for your cheeseboard, toppings for sandwiches and crackers, and just for plain old snacking.

Quick DIY Refrigerator Pickles

Ingredients

  • Choose your veggies first(pick one)
    • 2 pickling cucumbers
    • 2 large bell peppers, sliced
    • ½ lb asparagus, trimmed
    • 3 large red onions, sliced thinly
    • 7-8 jalapenos, sliced
  • 2 1/2 cups sugar
  • 2 cups ShopRite distilled white vinegar
  • 2 Tbsp non-iodized salt
  • 2 tsp Pickling Spice
  • 2 tsp Mustard Seed

Directions

  1. Place vegetables of choice into 4 hot sterilized half-pint canning jars.
  2. Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt. Reduce heat to low; simmer 5 minutes.
  3. Ladle over cucumbers, leaving 1/4-inch headspace. Stir each jar well. Cool. Cover with metal lids and screw on bands.
  4. Refrigerate pickles. Shake jars once a day for 3 to 5 days to redistribute seasonings and blend flavors. Store in refrigerator up to 2 months.
