Cinco de Mayo Celebration with ShopRite

Cinco de Mayo chips and dips

Start with easy chips and dips for small bites, like guacamole, fresh salsa, queso and sweet chili pita chips, then wow your guests with our 4 epic nacho platters and fresh and frozen margaritas!

Pulled Pork Nachos

Ingredients

  • 4 ounces Wholesome Pantry tortilla chips(about 4 cups)
  • 1 cup pulled pork, homemade or store-bought
  • ¼ cup pickled jalapenos
  • ½ cup Pace Mango Habanero Salsa
  • 1 cup shredded Wholesome Pantry Cheddar cheese(about 4 ounces)
  • 1 Avocado from Mexico, chopped
  • Handful of fresh cilantro, chopped

Directions

  1. Heat the oven to 350˚F.  Line a 10×15-inch rimmed baking sheet with foil and spray with cooking spray (or spray a cast iron skillet with cooking spray)
  2. Arrange the tortilla chips in a single layer, overlapping slightly.  Spoon the pork over the chips, breaking the pork into smaller pieces, if needed.  Top with jalapeňo slices and salsa, if desired.
  3. Sprinkle cheese over top and bake for 10 minutes or until the cheese is melted. Add fresh avocado and cilantro before serving

WP Korean Beef Bulgogi Nachos with Pace Salsa FINAL

Korean Beef Bulgogi Nachos

Ingredients

  • 4 ounces Wholesome Pantry tortilla chips(about 4 cups)
  • handful of shredded red cabbage
  • 1 cup Korean Beef BBQ, homemade or store-bought
  • ¼ cup pickled jalapenos
  • ½ cup Pace Poblano Corn Salsa
  • 1/4 cup crema
  • 1/4 cup sriracha mayo
  • 3 scallions, sliced

Directions

  1. Heat the oven to 350˚F.  Line a 10×15-inch rimmed baking sheet with foil and spray with cooking spray (or spray a cast iron skillet with cooking spray)
  2. Arrange the tortilla chips in a single layer, overlapping slightly. Add the red cabbage, then top with the beef, jalapenos and salsa.
  3. Bake for 10 minutes or until everything is warmed through. Remove from oven, drizzle with crema and sriracha mayo. Sprinkle with sliced scallions before serving.

Sweet Potato, Avocado and Black Bean Nachos

Ingredients

  • 4 ounces Wholesome Pantry Sweet Potato tortilla chips (about 4 cups)
  • 1 cup Wholesome Pantry black beans, rinsed and drained
  • 1 cup Wholesome Pantry corn, drained
  • ¼ cup pickled jalapenos
  • ½ cup Pace Peach Mango Habanero Salsa
  • 1 cup shredded Wholesome Pantry Cheddar cheese(about 4 ounces)
  • 1/4 cup crema
  • 1 Avocado from Mexico, chopped
  • Handful of fresh cilantro, chopped

Directions

Greek Chicken Nachos

  • 4 ounces Wholesome Pantry tortilla chips (about 4 cups)
  • 1 cup shredded rotisserie chicken
  • 1/4 cup canned artichoke hearts, drained and chopped
  • 1/2 cup ShopRite Trading Co Kalamata olives, drained
  • ¼ cup roasted red peppers
  • 1/2 cup ShopRite feta cheese crumbes
  • 1/4 cup Wholesome Pantry Tahini
  • Handful of fresh parsley, chopped

Directions

  1. Heat the oven to 350˚F.  Line a 10×15-inch rimmed baking sheet with foil and spray with cooking spray (or spray a cast iron skillet with cooking spray)
  2. Arrange the tortilla chips in a single layer, overlapping slightly.  Spoon the chicken over the chips, breaking the pork into smaller pieces, if needed.  Top with artichoke hearts, olives and roasted red peppers.
  3. Sprinkle feta over top and bake for 10 minutes or until the cheese is melted. Remove from oven and drizzle with tahini, then top with fresh parsley before serving

Cinco de Mayo Margaritas classic FINAL

Classic Margarita

Ingredients

  • 3 oz fresh lime juice
  • 4 oz triple sec
  • 6 oz tequila
  • 1 oz simple syrup
  • Kosher salt (optional), for rimming the glass

Directions

  1. Combine all ingredients in a cocktail shaker filled with ice and shake.
  2. Strain into a chilled and salted margarita glass filled with fresh ice.
  3. Garnish with a lime, if desired

ShopRite Pineapple Margaritas FINAL

Frozen Pineapple Margarita

Ingredients

  • 6 fluid ounces tequila
  • 2 fluid ounces triple sec
  • 8 ounces ShopRite frozen pineapple chunks
  • 4 oz lime juice
  • 2 tbsp Wholesome Pantry cane sugar
  • 16 oz crushed ice

Directions

  1. Combine all ingredients except ice in your blender and blend until smooth. Add crushed ice to salt-rimmed margarita glasses and pour in margaritas and serve!

WP Strawberry Margarita

Frozen Strawberry Margarita

Ingredients

  • 6 fluid ounces tequila
  • 2 fluid ounces triple sec
  • 8 ounces Wholesome Pantry frozen strawberries
  • 4 oz lime juice
  • 2 tbsp Wholesome Pantry cane sugar
  • 16 oz crushed ice

Directions

  1. Combine all ingredients except ice in your blender and blend until smooth. Add crushed ice to salt-rimmed margarita glasses and pour in margaritas and serve!

Watermelon Mint Margaritas FINAL

Watermelon Mint Margarita

Ingredients

  • 2 ½ cups seeded, cubed watermelon
  • 2 tbsp lime juice
  • 1 ½ tsp Wholesome Pantry Cane Sugar
  • 2 tbsp mint leaves
  • 1 oz reposado tequila (or tequila of choice)
  • 1 tbsp Cointreau
  • 4 oz chilled ShopRite lemon-lime soda

Directions

  1. Add watermelon, lime juice, and sugar to your blender and blend until smooth.
  2. Add mint, tequila, and Cointreau and give the blender a quick pulse to combine. Stir in soda and then serve over either frozen watermelon cubes or crushed ice. Garnish with mint and watermelon if desired.

Frozen Mango Coconut Margarita

Ingredients

  • 6 fluid ounces tequila
  • 2 fluid ounces triple sec
  • 8 ounces Wholesome Pantry frozen mango
  • 4 oz Wholesome Pantry coconut milk
  • 2 tbsp lime juice
  • 2 tbsp Wholesome Pantry cane sugar

Directions

  1. Combine all ingredients except in your blender and blend until smooth. Add to salt-rimmed margarita glasses and pour in margaritas and serve!
