Stocked Pantry? Can Do!

In the dead of winter, few things are as comforting as a well-stocked pantry.  Snowstorm coming?  No problem – a pantry full of staples means there are enough canned vegetables, beans and dried pasta to last for days. (Maybe weeks!)  No time for a big trip to the grocery store? A fully loaded pantry helps stretch out the full-cart shopping trips.  Interested in trying a new recipe? If you’re stocked up on spices and condiments, you might not need to make a special trip to the store.

Last week I took advantage of ShopRite’s Can Can sale to restock my pantry. Here are some of the ShopRite private label items I loaded up on, and what I’ll probably do with them next time the fridge is looking empty:

  • Canned tomatoes (tomato soup, marinara sauce, lasagne, chili, chicken curry)
  • Canned black beans (bean & corn salad, black bean soup, chili, nachos, taco salad)
  • Canned cannellini beans (white bean puree, pasta with beans, added to salad)
  • Canned garbanzo beans (homemade hummus, roasted as a snack, added to salads)
  • Canned pumpkin puree (pumpkin soup, pumpkin pancakes & muffins, added to chili to thicken)
  • Canned beets (beet salad with vinaigrette and crumbled feta or goat cheese)
  • Dried pasta of all shapes
  • Green olives (olive tapenade, olive & cheese balls, added to baked chicken & pasta dishes)
  • Capers (added to pasta dishes, pan-fried for a salad topper)
  • Pickled jalapenos (added to any Mexican dish for a little heat and color)
  • Canned peaches in pear juice (a healthy snack or base for desserts)
