ShopRite’s Pita Chips + Simple Avocado Dip

It was so gorgeous this weekend that a Saturday snack-style lunch al fresco seemed to beckon.  We couldn’t even think of staying indoors so I packed up mini picnic and headed to the park. One thing you always want in your basket? Chips! ShopRite’s crunchy, kettle-cooked pita chips are just the right vehicle for scooping up a favorite dip, in our case, a lemony smashed avocado herb one.


ShopRite’s pita chips come in a few flavors: Garlic-Parmesan, Sea Salt, Chili and Multigrain. The Multigrain were my personal favorite so that’s what I opted to pair with this easy avocado dip.


The chips are nice and thin/crunchy and are great for packing up in a lunch box, or picnic basket. The dip can also be made a little before you want to eat it and covered with plastic. So go grab a bag of these chips, make some dip and get out of the house to the nearest park to soak up the sun.


A note on the dip: bold but nonetheless a bit free-form and more than anything, quick, it relies on just a few simple ingredients. Flakey salt and fresh lemon juice turn a simple avocado into something gourmet, and by grating garlic teensy weensy with a microplane, you’ll not only save yourself from mincing but you’ll get the best dispersion of flavor. As always, adjust according to your taste, use more or less lemon juice to make it smoother, and use more quantities to feed more people. I prefer to leave the avocado slightly chunked and just mash it a little. You can use whatever herb you have at your fingertips: basil would be great, but I had parsley, and dill, tarragon or cilantro are great too.



1/2 a medium ripe avocado, cut into chunks
1/2 a small garlic clove
Few swipes lemon zest
1/4 of a small lemon squeezed
A grind of fresh black pepper
Flakey (course) sea salt
A drop olive oil
Small handful snipped fresh parsley leaves (or basil, etc)


In a small bowl, toss the snipped herb leaves with the avocado chunks. Using a microplane grater, grate the garlic over the bowl, followed by the lemon. Squeeze in some juice and mix together, gently mashing with a fork but leaving it a little chunky. Add the pepper and salt. Finish with a small drop olive oil on top and a little more salt if desired.

Serve promptly with with ShopRite’s Multigrain Pita Chips.
