Gnocchi with Arugula and Sun-Dried Tomatoes

G.K. Chesterton is quoted as saying that “music with dinner is an insult both to the cook and the violinist.”

Ah yes, that is an interesting notion, Mr. Chesterton. However, I’d like to challenge your statement to a certain degree: What if the cook is the one putting on the show. And, by a show, I mean by singing and dancing about the room.

Is enjoying such a spectacle still an insult to the cook and the performer?

I ask simply because upon cooking this dinner, I proceeded to do a dance and sing around my dining room out of pure excitement. Excitement over the deliciousness of the dish. Excitement over the homegrown arugula that was in this dish. And that dinner was simply ‘dressed’ with olive oil. Delicious olive oil at that. And it was completely yummy!  I also have a degree of certainty that my husband enjoyed it immensely. The dance … and the dinner … as it were.

The truth of the matter is that this olive oil is splendid. I use olive oil every day, and in several meals. So, I’d like to think of myself as a quasi-aficionado of olive oils. And this is some good stuff here, people.

And it’s quite exciting that is grown and produced within the American borders. Very exciting stuff.

I encourage you to make this dish and then dance around as you eat it, putting on a show. I don’t think that Mr. Chesterton would mind.

Gnocchi with Arugula and Sun-Dried Tomatoes
Yields: 4 servings

2 lb gnocchi
3 TBS ShopRite California Extra Virgin Olive Oil
2 cups arugula, chopped
1/2 cup sun-dried tomatoes, packed in oil
1/2 cup roasted red pepper, diced
2 garlic cloves, minced
2 TBS lemon juice
2 tsps dill
Salt and pepper to taste

1. Cook the gnocchi according to the package’s instructions. Drain and and place into a medium-sized bowl.
2. Add arugula, sun-dried tomatoes, and garlic. Toss until well-incorporated.
3. Top with ShopRite California Extra Virgin Olive Oil, lemon juice, dill, and salt and pepper. Toss until well-coated.
4. Serve immediately, take a bite, and dance.
