Spicy Salsa Wings

My husband and I love to barbecue all year, but grilling in the summer is even more special.  A meal cooked on charcoal on our small deck feels like a vacation after a hard week at work.  We love to cruise the aisles at ShopRite and pick out our favorite foods and then come home and figure out how to cook them on our grill.  When I received a jar of ShopRite’s Peach Mango Salsa I knew just what to do:  make it into a grilling marinade!

We love cooking chicken wings on the grill because they cook quickly and it’s easy to help yourself to a little or a lot depending on your appetite.  They also reheat well.  These wings have a mild/medium level of heat, but if you like them spicier, add more jalapeno or serve them with hot sauce.

Spicy Salsa Wings
makes 24 wings

2 pounds chicken wings (or about 24 drumettes)
1 jar ShopRite Mango Peach Salsa
1 whole jalapeno, diced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cumin

Mix chicken wings with all ingredients.  Let wings marinate in the refrigerator for at least 1 hour prior to cooking (or overnight).

Grill wings over medium heat until cooked through and crispy on the exterior.  Alternately, you can bake the wings in the oven at 400 degrees for 30-40 minutes.

Serve hot.
