Spicy Grilled Asparagus Topper


Spicy Grilled Asparagus Topper

Prep Time: 15 min | Total Time: 15 min | Makes 12 servings, 3 topped crackers each

What You Need:

1/2 cup part-skim ricotta cheese
1 tsp. EACH zest and juice from 1 lemon
1/8 tsp. ground black pepper
36 TRISCUIT Crackers
36 fresh asparagus spears, grilled, cut in half
1 Tbsp. Sriracha sauce (hot chili sauce)

Make It:

*Mix ricotta, lemon zest, juice and pepper until blended.
*Spread onto crackers.
*Top with remaining ingredients.

Tips

Jazz it Up! Garnish with additional lemon zest before serving.

How to Grill the Asparagus: Heat grill pan on medium-high heat. Add asparagus; cook 3 to 5 min. or until grill marked and crisp-tender, turning occasionally.

Jalapeño-Garlic Creamy Feta Dip


Jalapeño-Garlic Creamy Feta Dip

Prep Time: 10 min | Total Time: 40 min | Makes 12 servings, 2 Tbsp. dip and 16 crackers each

What You Need:

1 pkg. (8 oz.) Neufchatel cheese, softened
3/4 cup crumbled feta cheese
3 Tbsp. olive oil
1 Tbsp. honey
4 cloves roasted garlic
2 Tbsp. chopped seeded fresh jalapeño peppers, divided
1/3 cup chopped seeded tomatoes, divided
WHEAT THINS Toasted Pita Original Oven Baked Crackers

Make It:

*Use pulsing action of food processor to process Neufchatel and feta until blended.
*Add all remaining ingredients except 1/2 tsp. peppers, tomatoes and crackers; process until blended.
*Refrigerate 30 min.
*Reserve 1 Tbsp. tomatoes. Just before serving, add remaining tomatoes to cheese mixture; mix well. Spoon into serving bowl.
*Combine reserved tomatoes and remaining peppers; spoon over dip. Serve with crackers.

Tips:

Spice it Up! For a spicier dip, do not seed the jalapeño pepper before chopping.

How to Roast the Garlic: Cut off and discard top third of 1 garlic bulb; drizzle with 1/2 tsp. oil. Wrap in foil. Bake in 400°F oven 40 min. or until tender. Cool completely before using as directed.
