Directions

What you will need to make lemon cake. 1-1/4 cups water. 3 Eggs. 1/3 cup oil. 1. Preheat oven to 350 degrees F. Generously grease pans and dust with flour. 2. Blend in large mixing bowl at Low speed until moistened: cake mix, 3 egg whites, 1-1/4 cups water. 1/3 cup oil. Beat 2 minutes at Medium speed or 450 strokes by hand. Pour batter into pans. 3. Bake at 350 degrees F until done. Cake is done if toothpick inserted in center comes out clean. Do not test for doneness by touching with finger. Two 8 in. round layers, 35 - 40 min. Two 9 in. round layers, 30 - 45 min. One 13 in x 9 in pan, 35 - 40 min. One 10 in. or fluted tube pan, 45 - 50 min. 24 Cupcakes (fill 1/2 full), 15 - 20 min. 4. Cool cake in pan 10 to 20 minutes (tube pan 25 min.). Remove from pan and cool topside-up. Frost when completely cooled. Store loosely covered. Baking Tips: High Altitude (above 4000 feet): Preheat oven to 375 degrees F, mix as directed, and bake at 375 degrees F. Three 8-inch layers, 25 - 30 min. Two 9-inch layers, 30 - 35 min. 13x9-inch pan, 35 - 40 min. 10-inch tube, 45 - 55 min. 24 - 30 cupcakes, 15 - 20 min.
