Pancakes: Preheat griddle while preparing batter. Electric griddles should be set 400 degrees F. Griddle is ready when a small drop of water dances on it before evaporating. Mix one cup of pancake mix and 3/4 cup of cold water. Stir with wire whip or beater until batter is smooth. Pour batter onto hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look dry. Turn only once.
