Ingredients

Chocolate Chunks (Organic Natural Evaporated Cane Sugar, Organic Chocolate Liquor, Organic Cocoa Butter, Non-GMO Soy Lecithin/Emulsifier (Chunks May Contain Traces of Milk Protein.), Organic Vanilla, Organic Natural Evaporated Cane Sugar, Brown Rice Flour

Directions

1 Bag Pamela's Mix; 1 Cube butter or margarine (8 tbsp); 1 Egg (Large) or egg replacer (prepared). Using a Mixer: Cream 1 cube (8 tbsp) butter or margarine in a bowl. Ass Pamela's Mix and one large egg (or egg replacer) and mix together for approximately 1 full minute, until mix is fully incorporated. If mix appears dry or crumbly, add 1 tbsp water. Place heaping tbsp dollops of dough on lightly greased cookie sheet and flatten. Cookies will spread. Bake in a preheated 350 degrees F oven for 17 to 20 minutes. For crispier cookies, increase bake time. Yields 18 to 20 cookies. Remove cookies with spatula from baking sheet while still warm. Cookies will have a darker color due to cocoa power in the mix. Variations: 1/2 Cup nuts - walnuts, macadamia or pecans; 1/4 Cup additional dark chocolate chips, and/or white chocolate chips, peanut butter or butterscotch chips. Frozen Dough: Dough can be frozen and baked for whenever you desire hot from the oven cookies. Form cookies and flatten on a lightly greased cookie sheet. Place cookie sheet in freezer for 15 minutes. Remove frozen dollops from cookie sheet and place in a plastic container or freezer bag and refreeze. Or form dough into a log, wrap in plastic wrap and freeze. To bake, preheat oven to 350 degrees F. Remove from plastic wrap from dough and cut log into 1/4 inch slices. Place frozen slices of dough on lightly greased cookie sheet and bake for 17 to 19 minutes. Hand Mixing: Melt 6 tbsp butter or margarine. Add Pamela's Mix and one egg (or prepared egg replacer) and stir until completely incorporated. Dough will appear dark and slightly crumbly. Press together heaping tbsp dollops and place on lightly greased cookie sheet. Flatten the bake in a preheated 350 degrees F oven for 17 to 19 minutes. Something Different: Use 1/2 cup peanut butter instead of butter, plus 1/4 cup water in the cookie recipe. Bar Cookies: Mix all ingredients together and spread dough evenly in a lightly greased 8 x 8 pan. Bake in preheated 350 degrees F oven for 20 to 24 minutes. Let cool, then cut into bars. Frosting can be added for an extra special treat.
