Make delicious blueberry muffins in minutes! simply add 1 cup of fresh blueberries, an egg and milk to our blueberry muffin mix. Our delicious recipe contains a touch of vanilla and butter flavor, which compliments the blueberries and creates muffins that will melt in your mouth. You will need: 1 cup blueberries (fresh or frozen). 1 large egg (slightly beaten). 1/2 cup milk (4 fl oz). Directions: (about 12 servings). 1. Pre-heat oven to 400 degrees F. Lightly grease muffin pan. 2. Mix contents of pouch with milk and egg by hand for 3-4 minutes or until all dry ingredients are wet. Fold blueberries gently into batter (if frozen, do not thaw). 3. Spoon batter into prepared muffin pan, fill cups 1/2 full. 4. Bake at 400 degrees F for 13 - 15 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes. Loosen muffins with knife or metal spatula before removing from pan. Cool completely before serving. Concord's tip: for a delicious, sweet muffin top, sprinkle coarse sugar on top of muffin batter after step 3, but before baking. Muffin size - temperature - baking time: 28 Mini muffins - 400 degrees F - 9 -11 minutes. 12 Standard muffins - 400 degrees F - 13 -15 minutes. 6 Jumbo muffins: 400 degrees F - 19 - 21 minutes. High altitude baking (over 3,500 feet): add 2 teaspoons of flour and 2 teaspoons of water into the mix. Suggestions: Fill any empty muffin tins with water and bake muffins accordingly. If using small wild blueberries, use 3/4 cup. Recipe suggestion. Blueberry pancakes. To dry mix, add one egg and one cup of water. Fold in one cup of blueberries and let batter sit for 3 minutes. Pour 2 oz of batter onto a preheated, 325 degrees F griddle. Cook about 2 minutes on each side or until done. Makes 13 - 4 inch pancakes.
