Pumpkin Spice and Everything Nice with Wholesome Pantry

It’s finally autumn and we’re welcoming the change of seasons with plenty of pumpkin sweets and treats! From pancakes to oatmeal cookies, get your pumpkin spice on with a little help from Wholesome Pantry.

Pumpkin Pancakes

Pumpkin Pancakes

Prep Time: 10 minutes | Serves:5

Ingredients

  • 1 Wholesome Pantry egg
  • 1 2/3 cups Wholesome Pantry milk
  • 1/2 cup Wholesome Pantry pumpkin
  • 1 tsp ShopRite Pure Vanilla Extract
  • 2 cups ShopRite Complete Pancake Waffle Mix
  • 2 Tbs Wholesome Pantry brown sugar
  • 1 Tbsp Pumpkin Pie Spice

Directions

  1. Add milk, pumpkin, butter and vanilla; mix well. Mix in pancake mix, brown sugar and pumpkin pie spice until well blended. Let stand 5 minutes.
  2. Cook 1 to 2 minutes per side or until golden brown, turning when pancakes begin to bubble.

Pumpkin Waffles

Pumpkin Waffles

Prep Time: 15 min | Cook Time: 30 min | Serves:6

Ingredients

  • 2 ¾ cups ShopRite Complete Pancake and Waffle mix
  • 2 tbsp Wholesome Pantyr Cane sugar
  • 1 tsp allspice
  • 1/2 tsp ground ginger
  • 2 cups Wholesome Pantry Milk or Almond Milk
  • 1 cup Wholesome Pantry Pumpkin Puree
  • 3 eggs, lightly beaten
  • 1 Tbs canola oil
  • 1 tsp vanilla extract

Directions

  1. In a large bowl whisk together baking mix, sugar, allspice and ginger.
  2. In a medium bowl combine buttermilk, pumpkin, eggs, oil and vanilla; stir well. Add to dry mixture; whisk until smooth. Let batter stand 5 minutes.
  3. Cook batter in waffle iron according to manufacturer’s directions.

Pumpkin Oatmeal Cookies

Pumpkin Oatmeal Cranberry Cookies

Prep Time: 15 min | Cook Time: 14 min | Makes: 48 cookies

Ingredients

  • 2 cups ShopRite all-purpose flour
  • 1 1/3 cups Wholesome Pantry old-fashioned oats
  • 1 tsp ShopRite baking soda
  • 1 tsp ShopRite ground cinnamon
  • 1/2 tsp salt
  • 1 cup Wholesome Pantry butter
  • 1 cup packed Wholesome Pantry brown sugar
  • 1 cup Wholesome Pantry Cane sugar
  • 1 cup Wholesome Pantry Pumpkin Puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup Wholesome Pantry dried cranberries

Directions

  1. Preheat oven to 350° F. Lightly grease baking sheets.
  2. Mix flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, brown sugar and granulated sugar in a separate, largerbowl until light and fluffy. Add pumpkin, egg and vanilla extract; mix well. Add flour mixture; mix well. Stir in dried cranberries. Drop by rounded tablespoons onto prepared baking sheets.
  3. Bake for 14 to 16 minutes or until cookies are lightly browned and set in centers. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Pumpkin Muffins

Pumpkin Chocolate Chip Muffins

Prep Time: 15 min | Cook Time:20 min | Serves:12

Ingredients

  • 1 cup Wholesome Pantry Pumpkin
  • 1 cup ShopRite All Purpose Flour
  • 1 cup Wholesome Pantry Cane sugar
  • 3/4 tsp ground cinnamon
  • 1/8 tsp. salt
  • 3/4 cup ShopRite vegetable oil
  • 2 Wholesome Pantry eggs
  • 1/2 cup chocolate chips

Directions

  1. Preheat oven to 350°F. Line 12 muffin cups with paper baking cups; set aside. In large bowl combine pumpkin, flour, sugar, cinnamon and salt. Add oil and eggs. Mix until just combined. Stir in raisins and walnuts.
  2. Spoon batter into prepared muffin cups, filling each three-fourths full. Bake 20 to 25 minutes or until light brown and centers spring back when lightly touched. Cool in muffin cups on wire rack 5 minutes. Remove muffins from pans. Serve warm.
