Hot Cocoa Banana ‘Ice Cream’

Fun Hot Cocoa Recipes with ShopRite and Swiss Miss

Banana and hot cocoa ice cream made with frozen bananas and hot cocoa mix!

Prep Time: 20 min | Total time: 20 min | Makes: 8 servings (1/2 cup each)

Ingredients:

  • 4 cups frozen sliced bananas (4 cups = about 5 bananas)
  • 2 tablespoons reduced fat (2%) milk
  • 3 envelopes (1.25 oz each) Swiss Miss® Dark Chocolate Sensation Hot Cocoa Mix
  • fresh whipped cream, optional
  • Chopped chocolate, optional

Directions

  1. Place bananas in large food processor bowl. Pulse until mixture is crumbly, about 5 minutes, scraping sides of bowl frequently. Add milk; pulse until smooth. Add hot cocoa mix; pulse until blended.
  2. Serve immediately with fresh whipped cream and chopped chocolate, if desired. To serve banana mixture later, transfer to freezer-safe container and freeze overnight or until mixture is firm. Let stand 10 minutes; scoop to serve.

Cook’s Tips

This recipe works best with ripe bananas. Slice and freeze ripe bananas in 1 cup portions. Once there are 4 cups, make this recipe for an easy dessert. If you don’t have a large food processor, divide recipe into batches for blending.


Peppermint Chocolate Eggnog

Creamy no-cook chocolate eggnog recipe made with Egg Beaters, Swiss Miss Hot Cocoa Mix and peppermint ice cream

Prep Time: 10 min | Total time: 10 min | Makes: 4 servings (1/2 cup each)

Ingredients:

  • 1/2 cup Egg Beaters® Original
  • 1 envelope (1.25 oz each) Swiss Miss® Dark Chocolate Sensation Hot Cocoa Mix
  • 1 cup fat free half-and-half
  • 1/2 cup light peppermint ice cream, slightly melted
  • Crushed peppermint candies, optional
  • freshly whipped cream, optional

Directions

  1. Whisk together Egg Beaters and cocoa mix with whisk in medium bowl until blended.
  2. Add half-and-half gradually, stirring constantly. Gently stir in ice cream until blended well.
  3. Serve immediately or refrigerate several hours. Top with whipped cream and crushed peppermint candies, if desired.

Icy Chai Mocha

Hot cocoa mix, flavored with instant espresso and the spices used in chai, blended with ice for a lower-calorie cold beverage

Prep Time: 5 minutes | Total time: 5 minutes | Makes: 4 servings (about 1-1/2 cups each)

Ingredients:

  • 1-1/2 cups fat free milk
  • 2 envelopes (0.55 oz each) Swiss Miss® Sensible Sweets™ No Sugar Added Hot Cocoa Mix
  • 1 tablespoon instant espresso powder
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground ginger
  • 6 cups ice
  • 2 tablespoons honey
  • freshly whipped cream, optional

Directions

  1. Microwave milk on HIGH 1 minute 30 seconds. Meanwhile, whisk together cocoa mix, instant espresso, cinnamon, cloves, cardamom and ginger in medium bowl. Pour warm milk over cocoa mixture; whisk to combine.
  2. Place ice in blender container; pour cocoa mixture over ice. Add honey and blend until combined. Pour into chilled glasses or mugs; top with whipped cream. Serve immediately.

Prep Time: 15 min | Total time: 15 min | Makes: 2 servings (3/4 cup each)

Ingredients:

  • 1-1/2 cups fat free milk
  • 2 envelopes (0.55 oz each) Swiss Miss® Sensible Sweets™ No Sugar Added Hot Cocoa Mix
  • 1 tablespoon instant espresso powder
  • 1 cinnamon stick
  • 1 whole clove
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground ginger
  • Reddi-wip® Fat Free Dairy Whipped Topping

Directions

  1. Place milk, hot cocoa mix, instant espresso, cinnamon stick, whole clove, cardamom and ginger in small saucepan. Heat over medium heat 3 to 5 minutes or until hot, whisking occasionally.
  2. Remove and discard cinnamon stick and whole clove. Pour into heat-proof glasses or mugs; top with Reddi-wip. Serve immediately.

Cook’s Tips

No whole spices on hand? Substitute 1/8 teaspoon ground cinnamon and a dash ground clove for the whole. Reduce cardamom to a dash. Proceed with recipe as directed.

Prep Time: 15 min | Total Time: 55 minutes | Makes: 9 servings (1 portion with 2 tablespoons Reddi-wip each)

Ingredients:

  • 1 cup Ultragrain® All Purpose Flour
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup reduced fat (2%) milk
  • 2 tablespoons Pure Wesson® Canola Oil
  • 1 teaspoon vanilla extract
  • 3 envelopes (0.55 oz each) Swiss Miss® Sensible Sweets™ No Sugar Added Hot Cocoa Mix
  • 1-1/4 cups boiling water
  • Reddi-wip® Fat Free Dairy Whipped Topping

Directions

  1. Preheat oven to 350°F. Combine flour, sugar, cocoa, baking powder and salt in large mixing bowl. Add milk, oil and vanilla; mix until blended and smooth.
  2. Spoon batter into ungreased 8×8-inch glass baking dish. Place cocoa mix in medium bowl. Add boiling water; mix well. Pour evenly over batter. Bake 30 minutes or until wooden pick inserted near center comes out clean.
  3. Cool cake 10 minutes. Serve warm with Reddi-wip.
