Easy Banana Chocolate Chip Muffins

In the few days prior to Christmas, you will always find me in the kitchen.  I have lots of foodies on my gift list, as well as people that are difficult to shop for.  (You know who you are!).   Food gifts are always a big hit, and my mother-in-law has taken to saving the tins and containers I package her gifts in and giving them back to me right after Thanksgiving.  With the labels still attached, so I know what to put in them.

I have a few classic recipes that I make year after year, but I like to throw a few different items in there too.  This year, I decided to try a slightly healthier recipe, as sort of a head start for those putting healthy eating and exercise on their resolution list.

These banana muffins have whole wheat pastry flour in them, as well as the bananas, but still boast chocolate chips and a sugary topping, making them a treat that’s not too sinful.

Banana Chocolate Chip Mini Muffins
Yield: about 30 mini muffins


1 1/2 cups whole wheat pastry flour
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp ShopRite ground cinnamon
1/2 tsp salt
2-3 ripe mashed bananas
1/2 cup fat free plain Greek yogurt
1/2 vegetable oil
1/2 ShopRite brown sugar
2 large eggs
1 tsp ShopRite vanilla extract
1/2 cup ShopRite chocolate chips, roughly chopped
1 stick unsalted butter, melted
1/3 cup ShopRite granulated sugar


Preheat oven to 425 degrees and generously coat a mini muffin pan with cooking spray.

In a bowl, combine the flour, baking powder, baking soda, salt and 1/2 tsp cinnamon.  In a second bowl, combine the bananas, yogurt, vegetable oil, eggs, brown sugar and vanilla.

Mix the wet ingredients into the dry ingredients, then add chocolate chips and stir to combine.

Fill muffin cups almost to the top and bake 8 to 10 minutes.  Let cool 5 minutes, then remove muffins from pan and let the pan finish cooling, then repeat with remaining batter.

When muffins are completely cool, melt butter in a shallow bowl.  In a second shallow bowl, mix sugar with remaining cinnamon.  Dip muffins tops into butter, then coat with sugar mixture.
