A Heart-y Valentine’s Day Brunch

Valentine’s Day. It always seems to sneak up on the calendar. Although, I worked in the flower industry for a while and it never quite snuck up on me then… And, consequently, is always on my mind now (solidarity for the busy florists)! However, for most of the general public, its arrival can come as a surprise!

So time to start getting those wheels a-turnin’!

This year, the day de l’amour falls on a Sunday. In my opinion, this is fabulous. Sunday brunches hold a special place in my heart. Sundays are so much more relaxed and focused, and family-oriented, too. Beginning the week with Valentine’s Day and brunch on top of that is just stinkin’ super. So here’s an idea: why don’t you set your alarm a bit earlier this special day of Cupid and surprise your schnookems with brunch in bed, Valentine’s Day style!

I love bacon. Most people do. I bet your darling dearest does. And you love your snickerdoodle. So this Valentine’s Day, say it with bacon.


A Heart-y Valentine’s Day Brunch
Serves 2

Hearty Valentines Brunch

Ingredients & Tools:
4 slices bread
4 large eggs
4 slices of bacon
Olive oil
Salt and pepper
Heart shaped cookie cutter

Directions:

  1. Preheat your oven to 350 degrees. My favorite way to cook bacon is placing a cooling rack (that’s oven safe!) within a baking sheet. To form bacon hearts, begin by folding the bacon into a V. Fold one side backwards, tucking behind, and fold one side forward. Place onto a baking rack lined sheet and bake for 20 minutes, or until desired doneness.
  2. On a cutting board, push the cookie cutter into the center of each slice of bread to create a heart cut-out. (Save the inside heart for yummy toast to serve on the side!)
  3. Heat olive oil in a saute pan over medium-high heat. Place one piece of bread onto the pan, crack an egg into the center of the cut-out bread. Sprinkle salt and pepper over the egg. Cook until firm, approximately 90 seconds to a minute. Flip the bread/egg and cook on the other side for an additional minute to 90 seconds.
  4. Serve immediately!
