Honey-Roasted Turkey and Sweet Potatoes

Ingredients:

1 (4- to 7-lb.) turkey breast, thawed if frozen
2 tbsp. olive oil (optional)
1⁄2 tsp. coarse ground pepper
4 large sweet potatoes (about 21⁄4 lb.), peeled and cut into 1- to 11⁄2-inch cubes
6 carrots, peeled and cut into 1-inch pieces
4 tsp. grated orange peel
1⁄2 cup melted trans fat-free margarine
1⁄4 cup honey

Directions:

  1. Preheat oven to 325°F. Rinse turkey and pat dry. Brush with 2 tablespoons olive oil, if desired. Sprinkle turkey evenly with salt and pepper to taste. Place turkey on rack in large roasting pan; roast 1 hour.
  2. Meanwhile, in large bowl, combine sweet potatoes and carrots. Sprinkle with orange peel and salt and pepper to taste. Blend melted margarine and honey in small bowl; drizzle over sweet potato mixture and toss to coat.
  3. After 1 hour, remove turkey from oven and spoon vegetables around turkey in pan. roast 1 hour more, stirring vegetables once or twice, or until instant-read thermometer inserted in thickest part of breast registers 165°F and vegetables are tender. Loosely cover with foil. Let stand 5 to 10 minutes. Remove skin, if desired, before slicing turkey.
