Fresh Wild Caught Icelandic Cod Fillet

How to Select: Fish should smell fresh and mild with clear eyes that bulge slightly. Whole cod and fillets should have firm, shiny flesh and bright red gills. How to Store: Put fish in the refrigerator or freezer soon after buying it. If it will be used within 2 days after purchase, store in the refrigerator. Otherwise, wrap tightly in plastic or foil and store in the freezer.

How to Thaw: Thawing Gradually – Place in refrigerator overnight
Thawing Quickly – Seal in plastic bag and immerse in cold water
Thawing Immediately - Microwave on “defrost” setting and stop defrost cycle while fish is still icy but pliable
