In my busy life, I work two part time jobs. I’m also the coordinator for the soccer program at my children’s school, and a troop leader for my daughter’s Girl Scout troop.
That means that now that school has started, our evenings are a little crazy. From the time the kids get home from school to the time they go to bed, my days are usually filled with running here and there. That doesn’t leave a lot of time for dinner, but feeding my family wholesome meals is super important to me.
That’s why Barilla tortellini has long been a favorite product. Available in many flavors, it is shelf stable, so I can stock up my pantry. It cooks in no time (about 10 minutes) and is filling, flavorful and made with the highest quality ingredients. Whether on it’s own with Barilla sauce, or mixed into a recipe, my family always loves Barilla tortellini and I love knowing I’ve fed them a great meal.
This week, I made this easy meal in less than 30 minutes, using the three cheese flavor of tortellini and, as usual, it was a hit. I can always count on Barilla.

BROWN BUTTER TORTELLINI WITH SPINACH AND HAM

1 package Barilla three cheese tortellini
1 package fresh baby spinach (about 8 cups)
1 8-ounce piece cooked ham steak
1 large red bell pepper
1/4 cup butter
Cook tortellini according to package instructions. While they cook, place the spinach in a large colander. Dice ham into small pieces. Finely dice the pepper into small pieces. Drain the tortellini over the spinach in the colander.
Add butter to a large skillet and heat over medium heat 5-7 minutes or until the butter is a deep brown color, stirring occasionally. Add the bell pepper and reduce the heat to low. Add the ham, tortellini and spinach. Stir to coat.
