When ShopRite’s Can Can Sale rolls around, I always take the opportunity to stock up on pricier ingredients. Things like canned tomatoes and beans are always a great price at ShopRite year round (and an even better deal during the Can Can Sale!) but artichokes and asparagus are seasonal items that always cost a little more. This is a great time to grab extras of these ingredients or others that you know you will need, at an even better price. Canned goods have long dates, so go crazy!
Whether you’re a sports fan, glued to the TV during March Madness or just like to watch movies, here’s a crowd pleasing dip for your guests (or to keep all to yourself) from your canned goods stock.
TRIPLE VEGGIE DIP

1 1/2 cups grated Parmesan cheese, divided
1 can asparagus spears (14.5 oz), drained and chopped
1 can artichoke hearts (8.5 oz), drained and chopped
1 package frozen spinach (10 oz), thawed and drained
1 container chives and onion cream cheese (8 oz)
1/2 cup mayonnaise
Reserve 1/4 cup Parmesan cheese. Mix the remaining 1 1/4 cups and all remaining ingredients until blended.
Spoon into an oven safe dish and top with remaining cheese.
Bake at 375 F for 35 minutes or until lightly browned on top.
Serve with bread cubes, tortilla chips or cut up vegetables.
