Most people who know me know I’m very budget-minded, so when the challenge to create a Valentine’s Day meal for under $25 was presented, I was totally in my element. True to my nature, though, I had to take it to the next level and turn it into dinner for more than just two.
I started with ShopRite Kitchen Fresh Pasta Three Cheese Ravioli and added a pound of fresh shrimp and ShopRite frozen cut green beans to make Crispy Ravioli and Shrimp as a main course. I served up a bagged salad with ShopRite California French Style Dressing (needed a splash of red!) and finished up dinner with a Chocolate Mousse Torte made with ShopRite Real Chocolate Chips, Semi-Sweet and topped with French Vanilla ice cream. This serves 6 easily and stretches to 8 if you’re feeding tinier tummies. I came in well under $25 and everyone left the table well-satisfied.
Two of my favorite parts of my ShopRite store are seafood and produce. No matter what question I have, what product I might be needing, the associates (and throughout the store, really) are always available and more than willing to help. This time it was simply a question of which size shrimp would be best to use and what was most flavorful this time of year. Don’t hesitate to ask questions when you’re shopping. It’s the best way to feed your family well without breaking the budget!
CRISPY RAVIOLI AND SHRIMP
Hands-On Time: 10 minutes
Ready In: 30 minutes
1 Tablespoon butter
2 Tablespoons olive oil
1 large shallot – sliced thinly
1 clove garlic – minced
1 teaspoon Kosher salt
1 pound medium shrimp – peeled and deveined
1/2 pound ShopRite frozen cut green beans – thawed and drained
1 pound ShopRite Kitchen Fresh Pasta Three Cheese Ravioli
1/2 cup shredded Parmesan cheese
1. In a large non-stick skillet melt butter over medium-high heat and add olive oil. Stir in shallots and garlic. Cook briefly, about 1 minute.
Add ravioli and cook until it begins to brown. Push to the side and add shrimp and green beans. Cook over low heat until ravioli is crispy, beans are heated through and shrimp is
pink, stirring occasionally.
3. Sprinkle with Kosher salt and Parmesan before serving.
