Sugar Cookies and Merry Christmas
Sugar cookies are a staple during the Christmas baking season in our house. The only problem with most traditional handmade sugar cookies is they are time consuming. You have to allow the dough cool, then you have roll and cut out each individual cookie let alone decorate them. With so many people waiting patiently to enjoy cookies this holiday, why waste all that extra time?? Make these sugar cookies instead and alleviate all of those extra steps, spend the rest of the time wrapping Christmas presents or listening to some Christmas music!!
3 Cup ShopRite Flour
1 1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
3/4 Tsp Salt
1 Cup (2 Sticks) ShopRite Softened Butter
1/4 Cup Softened ShopRite Cream Cheese
1 1/2 Cup ShopRite Sugar
1 Tsp Vanilla Extract
1/4 Tsp Almond Extract
1/4 Cup Sugar plus some Red & Green Colored Sugar for Decoration
Start by preheating your oven to 375. Line your cookie sheets with parchment paper and set aside.
In your stand mixer bowl cream together the softened butter, cream cheese and sugar on a medium speed until smooth and fluffy. Beat in the almond and vanilla extracts and the eggs. In a medium sized bowl combine the flour, salt, baking powder, baking soda. Add the dry ingredients into the mixer with the wet ingredients in two or three installments on a low speed until everything is completely combined but still moist.
Pour the extra sugar along with any holiday colored sugar you’d like to decorate the cookies with into a shallow bowl. Take about a Tbsp of dough and roll it into a ball. Roll the dough ball into the sugar bowl and place it on a baking sheet about 2 inches a apart.
Bake the cookies about 8-9 minutes until they just begin to get the tiniest bit golden. Allow them to cook for a minute or two on the baking sheet and then move them onto a cooling rack to finish cooking.
